A Spark of Madness has cracked the mayo with this spicy, flavour-packed mayonnaise inspired by Hong Kong’s cha chaan tengs. Carefully crafted to deliver a hit of spice, tang, salt, creaminess, nuttiness, umami, zest, and smoke in every lick, it captures the bold, layered character of a true cha chaan teng experience.

Ingredients: Soyabean oil, water, egg, dried chilies, garlic, soya sauce (water, salt, soyabeans, sugar, wheat flour), ground sesame, peanut butter (peanut, sugar, peanut oil, salt), sugar, salt, vinegar, sesame oil, Sichuan peppercorn, mushroom powder, corn flour, xanthan gum (thickener) and concentrated lemon juice.
